Suisen, "Daffodil"

Suisen, "daffodil," ingredient grade matcha from the Uji, Kyoto region. Suisen is light green in color with flavor that will hold up to sweet or savory creations.

Once opened, store in a ziploc bag or air-tight canister in the refrigerator to help maintain freshness.

What is ingredient grade matcha?
Ingredient grade matcha is made with less delicate tealeaves, has a stronger flavor and is ideal for using in cooking, baking and mixing with milk/yogurt drinks. It has the same health benefits as high-grade matcha. The price of ingredient grade is related to how green the matcha powder is, denoting the quality of tealeaves used. The greener a matcha is, the more expensive.

Koyamaen Matcha
We sourced this matcha from Koyamaen, one of the foremost producers of tea in Japan. The history of Koyamaen dates back to the 1600's when Kyujiro Koyama began tea cultivation in Ogura, Japan. Koyamaen is known for the highest standard of quality in its matcha production.

Why sift matcha?
For the same reason bakers sift flour before using. The static electricity in the air encourages powders (be it flour, baking powder, cocoa, etc) to stick together and form clumps. The same is true with matcha green tea powder. Sifting matcha smoothes it out and lets it blend better into your drink or cooking recipe. Try sifting the whole 100g bag of ingredient grade matcha at once, the smooth results will last several weeks.

I add (2) teaspoons of this to Lactaid fat free milk and use one sweet n low to make a no fat no sugar green tea latte. Tastes great to me and a lot more convenient than continually running to Starbucks.

This is the way I start each and every day!  I make one or two latte's each morning.  I feel great and love beginning the day with such a beautiful green beverage!  This dissolves into the frothy milk nicely and it's economical.  Now, drinking a "brown" beverage (such as coffee), seems strange and unappetizing to me!  Bring on the GREEN!
